Eating in the province of Pistoia

The province of Pistoia is three places in one, and you eat in three different ways: the mountains towards Abetone, the Valdinievole with Montecatini and Pescia, and the plain of the plant nurseries with the Montalbano hills. Choosing a restaurant here means choosing which of the three first.

In the mountains: chestnut and woodland

Chestnut flour was the flour of the poor in these hills for centuries, and it is still the base of necci — thin wafers cooked between irons and filled with ricotta. Alongside are mushrooms, game and cheeses from small dairies. It is winter cooking, and it does not change much with the seasons.

In the Valdinievole: Sorana, Lamporecchio and the spa town

  • Sorana bean IGP — it grows on one small stretch of land along the Pescia river, has a very thin skin and is almost always eaten on its own with oil and pepper, which is how you tell whether it really is one.
  • Brigidini di Lamporecchio — paper-thin aniseed wafers, born as fairground sweets.
  • Berlingozzo — the carnival ring cake that Lamporecchio bakes all year round.
  • In Montecatini Terme the restaurant trade grew around the spa, and it shows: many covers, long opening hours, straightforward Tuscan cooking.

In the city and on the plain: carcerato, and sugared almonds

The dish that carries the city's name is carcerato, and it is salvage cooking: stale bread, broth and beef offal. It is named after the town prisons, which stood a few steps from the slaughterhouse. The confetti di Pistoia, sugared almonds, are a confectionery tradition documented since the sixteenth century. On the Montalbano, which the province shares with Prato, they make olive oil and Chianti.
